Crystallised Ginger, Cacao & Cashew Granola

All credit to the crystallised ginger for this recipe, which pretty much dictated its own ingredient team!

The fiery yet sweet crystallised ginger is balanced with creamy roasted cashews and rich, almost bitter cacao nibs. The substantial base of jumbo oats is lightened with pops of puffed buckwheat which also serve to add towards very slightly 'bitter' flavours, contrasting to the crystalised ginger. Freshly grated nutmeg and ground ginger in not-quite-detectable quantities bring the flavours together, elevated with Himalayan salt and a freshness from orange zest.

We love this invigorating blend with loose natural yoghurt, the softer the better - the one from Kappakasein is ideal.
