As the days get longer, daffodils tease the fields and the occasional ray of sun dances past the window, we thought it was the perfect time to share one of our absolute staff favourites;
'Banana, Miso & Pecan Granola' - a granola with the kind of moreish balance that keeps us sneaking handfuls straight from the tray (for quality control, of course).
The recipe for this granola starts with fresh ripe banana pulp, blended in for a deep, natural aroma. Then comes the umami twist: a touch of salty white miso, bringing a rich, almost caramel-like depth that makes everything else sing. Jumbo oats are baked to crisp perfection with wildflower honey and rapeseed oil, while house-made honey & miso glazed pecans lend a buttery, salty-sweet crunch, reminiscent of those candied nuts buried in your favorite praline ice cream (if you know what we mean...). Freeze-dried banana chunks, a whisper of vanilla, and just enough coconut sugar tie it all together, with puffed amaranth adding a delightful little pop in every bite.
Whether you enjoy it with yoghurt, milk, or straight from the tray bag (as we often do), this granola is the kind of thing you’ll want to keep within arm’s reach.
