Raw Courgette, Mozzarella, Lime and Granola Salad

We love this salad topped with a handful of crunchy Husk & Honey granola! Granola works beautifully on salads for a number of reasons...

Firstly, the texture - each of our granola blends has a unique 'crunch' from special ingredients like hempseed, hulled and puffed buckwheat, toasted mulberries, and of course, the toasted oats which make a brilliant topper for salads.

Secondly, our granola contains omega-3 seed mixes, which are a natural companion to raw salads; we use a healthy dose of pumpkin and sunflower seeds - rich in nutrients and taste, but also adding to the fantastic crunch.

Perhaps it is also the light sprinkling of Himalayan salt in our granola which subtly brings to balance the flavours of cinnamon, coconut and wildflower honey in each of the blends.

Most of all, Husk & Honey granola contains no refined sugars.

It is hard to describe so we'd encourage you to try it for yourself!

Here is a salad that we particularly love but feel free to get creative with whatever you have - just throw a handful of granola on top at the end - you'll see what we mean!!

Ingredients for the salad:

  • Fresh kale
  • Spiralised courgette
  • Sliced chestnut mushrooms
  • Ripped mint leaves
  • Raw sliced red onion
  • Ripped mozzarella (optional)

Ingredients for the dressing:

  • Juice of 3/4 lime
  • Olive oil
  • Himalayan salt
  • Cracked black pepper
  • Natural yoghurt (optional)

Topping:

Quinoa & Buckwheat Granola

Directions:

Assemble the salad ingredients in a large bowl, sprinkle a handful of Husk & Honey granola on top, drizzle with olive oil and spots of natural yoghurt if desired. Season to taste with salt and pepper and squeeze a lime over the whole thing. Enjoy!
