We love this salad topped with a handful of crunchy Granola! Granola works beautifully on salads and is a versatile addition particularly to dark earthy salads.
Our Classic Granolas all have a brilliant 'crunch' from ingredients like hempseed, hulled buckwheat, toasted seeds and oats, as well as a little sweetness from wildflower honey, and seasoning from salts and spices.
Here is one of the salads that we love, using our Quinoa & Buckwheat granola.
Ingredients for the salad (in your preferred ratio):
- Fresh kale
- Spiralised courgette
- Sliced chestnut mushrooms
- Ripped mint leaves
- Raw sliced red onion
- Ripped mozzarella (optional)
Ingredients for the dressing:
- Juice of 3/4 lime
- Olive oil
- Himalayan salt
- Cracked black pepper
- Natural yoghurt (optional)
Assemble the salad ingredients in a large bowl, sprinkle a handful of Husk & Honey granola on top, drizzle with olive oil and spots of natural yoghurt if desired. Season to taste with salt and pepper and squeeze a lime over the whole thing. Enjoy!
