Granola Energy Balls with Matcha & Cocoa by Mitzy Tan

Energy Balls are the ideal snack - they are easy to make, stay fresh, taste amazing and pack tons of energy into a tiny ball! These raw energy balls are a great way to use up the granola dust. Granola dust is packed with nutrition but often discarded, so we love this recipe by Mitzy Tan which takes the dust to a whole new level... enjoy!
Ingredients for 10 Energy Balls
- Soft pitted dates (1/2 cup)
- Cocoa powder (1/4 cup)
- Walnuts (1/2 cup)
- Husk & Honey Quinoa & Buckwheat Granola - dust! (2 tablespoons)
- Desiccated Coconut (1/4 cup)
- Almond milk (1 tablespoon)
- Matcha powder
- Chia seeds (1 teaspoon, optional)
Blend the pitted dates in a food processor and until they come together, forming a sticky ball. Then add walnuts, almond milk and optional chia seeds, blending again until well mixed. Add the desiccated coconut, cocoa and 2 tablespoons of Husk & Honey granola (and its dust from the bottom of the packet!), and blend again so that the ingredients are well mixed and again form a large sticky ball.
Remove from the processor and hand roll the sticky mix into 10 even-sized balls. Mix 2 spoons of desicated coconut with the matcha powder and coat the energy balls by rolling around in the mixture. Pop them in a tupperware and store in the fridge for up to 3 days.
