This granola salad was created by Sophie Missing who kindly shared her delicious spring salad recipe and photos. Enjoy!
For 1:
- ½ ripe avocado, sliced
- 1 blood orange, depithed, deseeded and thinly sliced
- 3 leaves radicchio, finely shredded
- a few spoons of red wine vinegar
- a good pour of rapeseed oil
- 1 heaped tbsp granola
- sea salt, to taste
Directions:
Prep all your ingredients then lay on a plate: avocado first, then radicchio and the orange slices. Drizzle over vinegar and oil then top with granola and salt to taste.
